Chicken Cacciatore – Nourishing Comfort with a Purpose

At Alevia Medical Weight Loss, we believe that food is not just fuel—it’s part of your healing, your progress, and your relationship with yourself. That’s why we focus on meals that are both nourishing and satisfying, without the pressure of perfection.

This April, we’re sharing a simple, wholesome recipe: Chicken Cacciatore. It’s rich in flavour, packed with vegetables, and designed to support your health journey in a sustainable, realistic way.

Because progress isn’t about restriction—it’s about building habits you can live with.

Why This Recipe Works

When you’re navigating weight loss with medical support, balance is key. This dish offers:

  1. Lean protein from chicken thighs to support satiety and muscle health

  2. Fibre-rich vegetables to aid digestion and fullness

  3. Healthy fats from olives for flavour and satisfaction

  4. Low added sugars and processed ingredients, aligning with evidence-based nutrition

It’s a meal that fits into real life—simple to prepare, comforting to eat, and supportive of long-term change.

Chicken Cacciatore Recipe

Ingredients

  1. 1 brown onion, diced

  2. 500g chicken thigh fillets

  3. 400g tin of diced tomatoes

  4. 200g green beans

  5. 10 mushrooms, sliced

  6. 1 red capsicum, cut into 1cm squares

  7. 10–15 Kalamata olives

Method

  1. Heat a small amount of oil in a large pan over medium-high heat.

  2. Add the chicken thigh fillets and cook until browned on both sides (they don’t need to be fully cooked through yet). Remove and set aside.

  3. In the same pan, add the diced onion and cook for 3–4 minutes until softened.

  4. Add the mushrooms and cook until they begin to brown.

  5. Stir in the red capsicum and green beans, cooking for another 3–4 minutes until slightly softened.

  6. Pour in the diced tomatoes and mix well.

  7. Return the chicken to the pan and add the olives.

  8. Reduce heat to low, cover, and simmer for 20–25 minutes until the chicken is tender and cooked through.

Serve immediately, or allow to cool and refrigerate for later.
