Golden Roasted Veggies with Hearty Lentils: The Perfect Power Bowl

There’s something deeply satisfying about a meal that works as hard as you do. This month’s recipe — a Roasted Vege & Lentil Bowl — is wholesome, nourishing, and genuinely delicious. It’s the kind of food that doesn’t ask you to choose between eating well and eating in a way that feels good.

At Alevia, we talk a lot about sustainable change — not crash diets, not meal replacements, not white-knuckling your way through another week of bland food. Meaningful progress often starts with habits that feel realistic enough to repeat. And that includes having a repertoire of meals you actually want to come back to.

This bowl is one of those meals.

Why This Bowl Works

It’s satisfying

One of the most common frustrations we hear is eating a meal that looks healthy but doesn’t feel especially satisfying. This bowl combines lentils, pumpkin and leafy greens for a mix of fibre, texture and flavour that can make a meal feel more substantial.

It’s built around whole ingredients

Legumes, vegetables and leafy greens bring variety, colour and nutritional value to the plate. Meals like this can be a practical way to include more whole foods in your week.

The spices do more than add flavour

Smoked paprika and cumin bring warmth and depth, turning simple ingredients into something far more interesting. They help make the bowl feel generous and comforting rather than overly virtuous.

Leafy greens, done cleverly

A small but brilliant technique in this recipe is pouring the hot roasted vegetables directly over the kale or spinach. It softens the leaves just enough to make them tender and easy to eat, while keeping the bowl fresh and vibrant.

The balsamic glaze

A drizzle of balsamic glaze pulls everything together with a little sweetness and acidity. A little goes a long way — and it’s a nice reminder that healthy eating doesn’t need to feel austere.

A Note on Portion Size and Personalisation

This recipe serves two and is designed as a satisfying main meal. Depending on your preferences, goals, and what else you’re eating across the day, you might adjust the lentil quantity, add a protein source like grilled chicken or halloumi, or pair it with a side.

If you’d like more personalised nutrition advice, your Alevia dietitian can help tailor meals to your needs, preferences and routine.

The Roasted Vege & Lentil Bowl Recipe

Serves 2

Ingredients

400g butternut pumpkin, diced

1 red capsicum, cut into strips

1 cup cooked lentils

2 tsp olive oil

2 tsp smoked paprika

2 tsp cumin

2 cups kale or spinach

1 tbsp balsamic glaze

Method

Preheat oven to 180°C.

Toss the pumpkin and capsicum with the olive oil, smoked paprika and cumin until well coated.

Spread on a lined baking tray and roast for 25–30 minutes, until tender and beginning to caramelise at the edges.

Divide the leafy greens between two bowls.

Spoon the hot roasted vegetables directly over the greens to gently wilt the leaves.

Top with lentils and finish with a drizzle of balsamic glaze.

One Bowl, Bigger Picture

We often say that progress is made in small, repeatable choices. A bowl like this can be one of them: simple, satisfying food that fits more easily into everyday life.

Bon appétit — or as we like to say, eat well and be kind to yourself.
